1 Lb. Snapper - YellowtailPeople tend to be intimidated by baked fish. Actually any kind of fish that isn't fried. Snapper, cod and other light fish can easaly be baked with tons of flavor. Just marinate it in your favorite italian dressing or a simple vinagrette of basalmic vinagar, oregano, parsley, garlic, and extra virgin olive oil. After letting it sit for an hour  bake at 350f for about a half hour or so (until the flesh is firm but flaky) be carefull fish goes from undercooked to over cooked. Would then go great with red potatoes and asperagus. Matches well with Shiraz or Chardoney 2005 Vintage Ad W.J. Deutsch & Sons, Inc. Yellow Tail WinePersonally I like yellow tail wines. They make a really good merlot and they are all very reasonable in price.
